Ingredients
- 1 whole chicken, cut into pieces
- 2 cups basmati rice
- 1 large onion, finely chopped
- 2 tomatoes, pureed
- 2 tbsp Kabsa spice mix (cumin, coriander, paprika, cinnamon)
- 1/4 cup almonds and raisins for garnish
Directions
- In a large pot, sauté the onions until golden brown, then add the chicken pieces and Kabsa spice mix, cooking for 5-7 minutes.
- Stir in the tomato puree and cook for an additional 5 minutes.
- Add 4 cups of water and bring to a boil, then reduce the heat and simmer until the chicken is cooked through.
