This Spicy Chickpea Buddha Bowl with Tahini Dressing is a hearty, nutritious meal packed with plant-based protein and bold flavors. The combination of roasted veggies, crispy chickpeas, and the creamy tahini sauce makes it a satisfying option for lunch or dinner.

Ingredients

  • 1 can chickpeas, drained and rinsed

  • 1 sweet potato, diced

  • 1 cup quinoa, cooked

  • 2 cups mixed greens

  • 1 avocado, sliced

  • 1 tsp paprika

  • 1/2 tsp cayenne pepper

  • 2 tbsp olive oil

  • Salt and pepper to taste

Directions

  • Preheat the oven to 400°F (200°C). Toss the chickpeas with olive oil, paprika, cayenne pepper, salt, and pepper. Spread on a baking sheet along with diced sweet potatoes and roast for 20-25 minutes until crispy.
