Ingredients

  • 1 can chickpeas, drained and rinsed

  • 1 bell pepper, sliced

  • 1 cup broccoli florets

  • 1 carrot, julienned

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tbsp soy sauce

  • 1 tbsp sriracha or hot sauce

  • 1 tbsp lime juice

  • Salt and pepper to taste

  • Cooked rice or quinoa for serving

Directions

  • Heat olive oil in a large skillet over medium heat. Add the garlic and sauté for 1 minute until fragrant.

    For extra protein, add tofu or tempeh, or swap veggies based on what's available, like zucchini or mushrooms.

  • Add the chickpeas, bell pepper, broccoli, and carrot to the skillet. Stir-fry for 8-10 minutes until the vegetables are tender but still crisp.

  • In a small bowl, mix together soy sauce, sriracha, and lime juice. Pour the sauce over the chickpea and veggie mixture, stirring well to coat everything.

  • Cook for another 2-3 minutes to let the flavors combine. Season with salt and pepper to taste.
