Ingredients

  • 1 can chickpeas, drained and rinsed

  • 1 cup quinoa, cooked

  • 1 tsp chili powder

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/4 red onion, sliced

  • 2 tbsp lemon juice

  • 2 tbsp olive oil

Directions

  • Preheat the oven to 400°F (200°C). Toss chickpeas with olive oil, chili powder, salt, and pepper. Roast for 20 minutes until crispy.
