Ingredients:
- 2 cups cooked sushi rice
- 1 can (5 oz) tuna, drained
- 2 tbsp mayonnaise
- 1 tbsp sriracha (adjust to taste)
- 1/2 tsp soy sauce
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1 tbsp sesame oil
- 1 green onion, chopped (for garnish)
- Sesame seeds & nori flakes (optional)
Directions:
- Form the rice cakes: Shape the cooked sushi rice into small, compact patties. Let them chill in the fridge for 10 minutes to firm up.
- Prepare the spicy tuna: Mix tuna, mayo, sriracha, and soy sauce in a bowl until well combined.
- Crisp the rice cakes: Heat sesame oil in a pan over medium heat and fry rice cakes for 3-4 minutes on each side until golden brown and crispy.
