Ingredients

  • 1 cup all-purpose flour

  • ½ cup unsalted butter, melted

  • 1 cup cream cheese, softened

  • ½ cup granulated sugar

     

  • ½ cup strawberry preserves or jam

  • 1 tsp vanilla extract

  • ¼ cup rolled oats (for the crumble)

Directions

  • Preheat the oven: Set the oven to 350°F (175°C) and line a square baking pan with parchment paper.

  • Make the crust and crumble: In a bowl, mix the flour, oats, and melted butter until crumbly. Press half the mixture into the bottom of the baking pan to form the crust.

  • Prepare the cheesecake layer: Beat the cream cheese, sugar, and vanilla until smooth. Spread this mixture over the crust evenly.

  • Add the strawberry layer: Spread strawberry preserves or jam on top of the cheesecake layer. Sprinkle the remaining crumble mixture on top.
