Ingredients:

  • 1 cup unsweetened dark chocolate chips (or 70%+ dark chocolate)
  • 2 large eggs, separated
  • 1/4 cup granulated erythritol (or preferred sugar substitute)
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup heavy cream (or coconut cream for dairy-free option)

Directions:

  1. Melt the Chocolate: Melt dark chocolate chips in a heatproof bowl over simmering water (double boiler method) or microwave in 20-second intervals until smooth. Let it cool slightly.
  2. Whisk Egg Whites: In a clean bowl, whisk egg whites with erythritol until stiff peaks form.
