Ingredients

1 lb chicken breast, sliced into strips

1 cup broccoli florets

1 red bell pepper, sliced

1 carrot, julienned

1/4 cup soy sauce

2 tbsp honey

2 tbsp rice vinegar

1 tbsp cornstarch (for thickening)

2 garlic cloves, minced

1 tbsp sesame oil

Sesame seeds for garnish (optional)
Directions

In a small bowl, whisk together soy sauce, honey, rice vinegar, and cornstarch to make the teriyaki sauce.

Heat sesame oil in a large skillet or wok over medium heat. Add chicken and cook until browned, about 5-7 minutes. Remove from skillet and set aside.

In the same skillet, add garlic and sauté for 1 minute. Then, add broccoli, bell pepper, and carrots, and stir-fry for 3-5 minutes until tender.

Return the cooked chicken to the skillet, pour in the teriyaki sauce, and cook for an additional 2-3 minutes until the sauce thickens and everything is coated.
