Turkey and Sweet Potato Chili

Ingredients:

  • 1 lb ground turkey
  • 2 medium sweet potatoes, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste

Directions:

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
  2. Add ground turkey, cook until browned, breaking it up with a spoon.
  3. Stir in chili powder, cumin, smoked paprika, salt, and pepper. Add sweet potatoes, black beans, diced tomatoes, and chicken broth.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes or until sweet potatoes are tender.
  5. Serve hot, garnished with fresh cilantro, avocado slices, or a dollop of Greek yogurt.


Note:
For added spice, include diced jalapeños or red pepper flakes. Substitute ground turkey with chicken or plant-based crumbles for a variation
