2 medium sweet potatoes, peeled and diced

1 can (14.5 oz) diced tomatoes

1 can (15 oz) black beans, drained and rinsed

1 medium onion, chopped

3 cloves garlic, minced

1 cup chicken broth

2 tbsp chili powder

1 tsp ground cumin

Salt & pepper to taste

Sauté: In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, cooking until softened (about 3-4 minutes).
