Ingredients

  • 1 lb (450g) ground turkey

  • 2 medium sweet potatoes, peeled and diced

  • 1 can (14.5 oz) diced tomatoes

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 medium onion, chopped

  • 3 cloves garlic, minced

  • 1 cup chicken broth

  • 2 tbsp chili powder

  • 1 tsp ground cumin

  • Salt & pepper to taste

  • 1 tbsp olive oil

Directions

  • Sauté: In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, cooking until softened (about 3-4 minutes).

  • Cook Turkey: Add the ground turkey, breaking it up with a spoon, and cook until no longer pink.

  • Simmer: Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until sweet potatoes are tender.
