This Vegan Banana Bread with Walnuts is a delicious and healthy twist on a classic favorite! Made without eggs or dairy, this moist and flavorful banana bread is packed with ripe bananas and crunchy walnuts. Ingredients
- 3 ripe bananas, mashed
- 1/3 cup coconut oil, melted (or other plant-based oil)
- 1/2 cup coconut sugar (or brown sugar)
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour (or whole wheat flour)

Directions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mash the ripe bananas and mix in the melted coconut oil, sugar, and vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
- Fold in the chopped walnuts, then pour the batter into the prepared loaf pan.
- Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean. Let cool before slicing.
