2 medium sweet potatoes, peeled and diced

1 can black beans, drained and rinsed

1 tablespoon olive oil

1 teaspoon cumin

1/2 teaspoon smoked paprika

8 small tortillas (corn or flour)

Fresh cilantro, avocado slices, and lime wedges for garnish
Directions

Preheat the oven to 400°F (200°C). Toss the diced sweet potatoes with olive oil, cumin, smoked paprika, salt, and pepper. Spread evenly on a baking sheet and roast for 20-25 minutes, or until tender.
