Ingredients

  • 2 tbsp olive oil

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 2 cups mixed vegetables (carrots, peas, corn)

  • 1 cup vegetable broth

  • 4 potatoes, boiled and mashed with 2 tbsp butter and ½ cup milk
